Ingredients
1 canned chipolte pepper, chopped2 cloves garlic, minced1 cup chopped onions1 T oil1 summer squash, diced1 yellow or red pepper, diced1 zuchini, diced1 tomato, diced2T tomato paste2 cups hominylarge can pinto beans, drained1 t oreganos & p
Directions
makes 4 servings
saute chipolte, onions, and garlic in oil
add veggies and cook until done
add hominy, beans, tomato paste, spices and enough water to make sauce. cook 30minutes and serve in whole wheat tortillas
