Chicken Creole

Ingredients
3 boneless, skinless chicken breasts0.5 cup chopped onion0.5 cup chopper green pepper1 celery stalk chopped2 cans Italian diced tomatoes3 tsp Creole seasoning- adjust to taste for heat
Directions
Preheat oven to 375. Brown chicken on both sides in non-stick pan. Remove to casserole dish. Sautee onion, celery, and green pepper about 5 min to soften. Add tomatoes and seasoning. and heat through. Pour over chicken evenly. Cover casserole dish and bake in oven for 1 hour 30 mintues. Serve over rice. This serves 6 people and is great for kids.
