Chocolate Raspberry Mini Cakes

1 pkg Devil's Food Cake Mix12 oz Diet Coke1 4-serving package of sugar free raspberry jello1 C boiling water
Preheat oven to 350 degrees. Mix cake mix and diet coke until a lumps disappear. Pour into greased or papered mini muffin tins. Bake for 8 to 10 minutes (or until cupcakes are thouroughly cooked). Once out of the oven, poke each cupcake two or three times (all the way through) with a wooden toothpick. Let cupcakes cool.
Once cupcakes have cooled, combine boiling water with jello mix. Carefully pour over the cupcakes. Let cupcakes set in refrigerator for at least two hours (or overnight).
Can be served with 2 T of Fat Free Cool Whip as a "frosting" (just be sure to add in the additional calories).
Makes approximately 48 miniature cupcakes.
