Egg Salad without Mayo

Ingredients
6 hard boiled eggs5 tbsp lite sour cream1 tbsp lemon juice2 tbsp diced onion2 tbsp dill pickle, chopped small1/2 tbsp dijon mustard1/2 tbsp fresh chives2 tsp paprikasalt and pepper to taste
Directions
Mash eggs with fork into bite size pieces.

In a bowl, mix all other ingredients together. Add eggs and mix well.

For the onions, you can use any kind you have on hand such as red onions or shallots. I found this recipe online and modified it a bit to suit my family's taste. I like it because it doesn't try to imitate the taste of mayo. Serve it over spring greens, in a pita or on good bread.
