Chicken Matzo Ball Soup

Ingredients
10 matzo balls1 can vegetable broth2 c water3 chicken thighs1 large carrot2 stalks celery1/2 med onion1/4 c fresh parsley1 tsp minced garlic1 tsp black pepper
Directions
Cook chicken thighs in water on low heat for aprox 1 hour or until meat easily falls off bone.

Chop celery, carrots and onion. Set aside.

Remove chicken thighs and seperate meat from skin, fat (if any) and bone. Skim broth of any extra fat. Return meat to pot with broth and add other ingredients.

Return to stove and cook covered on low for aprox 30 minutes.
