South Beach Chicken Jambalaya

1.5 pounds chicken breast1 TBSP EVOO2 bunches scallions, white and green parts chopped (keep 2 tbsp for garnish)1 green bell pepper, chopped2 garlic cloves, minced1/2 cup whole grain, quick cooking brown rice1/8 teaspoon cajoun seasoning or cayenne pepper2 cups low sodium chicken broth1 14oz can diced tomatoes
Season chicken with salt and pepper. Heat olive oil in a large skillet over medium high heat. Ass chicken, scallions, bell pepper, garlic; cook stirring often, until vegetables are softened, about 5 minutes.
Stir in rice and cajun seasoning. Add broth and tomatoes with juice and bring to a boil. Reduce heat to medium low, cover and simmer, stirring occasionally, until most of the liquid is absorbed, about 30 minutes. If there is excess moisture, cook uncovered for 3-5 minutes. Sprinkle wiht reserved scallions and serve.
