1 LB PENNE OR RIGATONI 1 ½ C. CANNED CRUSHED TOMATOES1 LB VEGETARIAN ITALIAN SAUSAGE CUT INTO ½” PIECES2 T. OLIVE OIL ½ C. WATER OR WHITE WINE1 LARGE ONION, THINLY SLICED SALT & PEPPER1 T. BASIL 2 GREEN PEPPERS, THINLY SLICED
COOK THE PENNE. PLACE THE SAUSAGE IN LARGE SKILLET FILLED WITH ½” OF WATER. SIMMER OVER HIGH HEAT 9 MIN. WHILE THE SAUSAGE COOKS, HEAT HALF THE OIL IN ANOTHER LARGE SKILLET. ADD THE ONION, THE PEPPERS, AND HALF THE BASIL. SAUTE FOR 9 MIN, STIRRING FREQUENTLY. REMOVE THE SAUSAGE FROM THE SKILLET WITH A SLOTTED SPOON, ADD IT AND THE REMAINING OIL TO THE PEPPER MIXTURE, COOK FOR 1 MIN. ADD TOMATOES, WATER OR WINE, SALT & PEPPER AND REMAINING BASIL. SIMMER OVER MED-HIGH HEAT FOR 5 MIN. TOSS THE PENNE WITH THE SAUSAGE MIXTURE AND SERVE.
