Lasagna Florentine Roll-Ups

10-12 Lasagna noodles - cooked1 lb. ground turkey - cooked and drained1 large onion, chopped1/2 bell pepper, chopped1 jar spaghetti sauce 1 8oz. can mushrooms - drained2 cups fat free cottage cheese - creamed1 pkg (10oz.) frozen spinach (thawed) well drained1/4 cup parmesan1 cup fat free mozzarella - shredded1 tsp. salt1/4 tsp. pepper2 garlic cloves or the equivelant in minced or powdered.Italian Seasoning to taste
Preheat oven to 350 to 375
cook lasagna as per directions on pkg. Drain, cover with cold water - set aside.
cook and stir turkey with onion and pepper til done. Drain. Stir in spaghetti sauce and mushrooms. Add spices. Heat to boiling. Pour 1/2 of this mixture into 9 x 13 baking dish.
Mix cottage cheese, spinach, and cheeses together.
Put 3 tbsp. down the center of a noodle. Roll the noodle up and cut in half. Place the cut side down in the sauce in the baking dish.
Spoon the rest of the meat sauce over the top of the rolls.
Cover with foil and place in oven for 30 to 35 minutes. Until hot and bubbly.
