Beth's Carrot Oatmeal Applesauce Muffins

Ingredients

2 large Carrots - shredded2 C. Quick Oats (NOT INSTANT)2 C. Whole Wheat Flour2 C. Nonfat Milk ( or Soymilk if you like) 1 tsp. Banking SodaI tsp. Baking Powder1 C. Unsweetened Applesauce3/4 C. Brown Sugar (more or less to taste)3 large eggs2 tsp. ground cinnamon1 tsp. nutmeg (added to taste if you like)
Preheat to 400F
Mix all together - do not over mix or muffins will be tough
Spoon into 24 greased muffin tins*
*Can use cupcake papers but because these muffins are low fat they tend to stick a bit to the paper...
Also feel free to add any thing you like - I make one batch with Chocolate Chips for my husband and one without for myself - also try raisins, craisins, walnuts, etc.

I'll make them again, but with a little tweaking. I increased the spices this time and add some cloves.
I will probably increase the brown sugar to 1 cup (maybe). But I'll definitely increase the spices even more the next time and probably add some toasted walnuts for a little texture. - 11/16/11
