Sauce:1 c plain yogurt½ c nayonaise7 oz jar roasted red peppers, drained and chopped1/3 c packed fresh basil, chiffonade1 large cl garlic, pressedsalt and pepper to tasteSandwiches1 med eggplant, sliced in ½” slicedsalt and pepper2 c arugula, washed, dried 1 t olive oil1 t red wine vinegar6 ww pita pockets
To make sauce, whisk all ingred. Season with salt and pepper. Cover and refrig until ready to use. To make sancwiches, Preheat broiler. On rack of broiler pan, arrange eggplant slices in one layer, seasoning with salt and pepper. Broil until golden, about 5 min each side. Toss together remaining ingred. Spread pockets with sauce and fill each with eggplant and arugula.
