Sauteed Chicken in Mustard-Cream Sauce

Ingredients
4 boneless, skinless chicken breast halves2 Tbsp. olive oil1/4 C. dry white wine 1/2 C. fat-free half and half2 Tbsp. Dijon mustard1 tsp. dried tarragonSalt and pepper
Directions
1. Sprinkle each chicken breast with a pinch of salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Add the chicken; saute until cooked through, 10-12 minutes, turning once. Transfer to a plate; keep warm.
2. pour the wine into the hot skillet; cook, stirring, until reduced by half, about 1 minute. Whisk in the cream, mustard, and tarragon, Cook, whisking, until thickened, about 2 minutes.
3. Pour any accumulated chicken juices into the sauce. Right before serving, drizzle the cream sauce over the sauteed chicken.

Makes 4 servings.

    My hubby just made this last night and the chicken was simply outstanding! He left it on the skillet until it was perfect inside and deliciously browned and grilled on the outside. The cream sauce was just creamy enough to cut the mustard. Really nice recipe. - 9/23/09
