"Healthy" Egg Salad

Ingredients

1&1/2 quarts of water4 large eggs (use only 2 yolks)1/4 cup chopped celery1/4 cup chopped gherkins1&1/2 Tbsp Miracle Whip LightBlack pepper to tasteSalt(optional) to taste
Cook eggs in 1&1/2 quarts of boiling water over hi heat for 3 minutes. Remove pot from heat and let stand in hot water for 10-15 minutes. Remove eggs from pot and place in cold water for 2-3 minutes. After cooling, peel eggs.
Slice eggs in half and discard 2 yolks.
Chop whites and add to mixing bowl with 2 remaining yolks, diced celery, mayo, pepper and salt if desired.
Fold gently and chill at least 1 hour.
MAKES 4 1/4-CUP SERVINGS
