Herbed Chicken and Mushrooms

5 cups sliced mushrooms1 onion, chopped1/2 cup carrots, chopped1/4 cup dried tomato (not oil packed)3/4 cup chicken broth3 tbsp quick cooking tapioca1 tsp thyme, crushed1/2 tsp basil, crushed3 lbs chicken thighs or drumsticks (with bone) skin removed3 cups cooked wild and brown rice blend
1. In slow cooker combine mushrooms, onion carrot, and dried tomato. Pour chicken broth and wine over all. Sprinkle with tapioca, thyme basil, and garlic salt. Place chicken pieces on vegetables in cooker.
2. Cover and cook on low 7 to 8 hours. Serve over rice.
