Ingredients
1 breast of chicken1/3 cup ham - cubed2 slices of pre-cooked bacon8 black olives1 tbsp smart balance butter2 tbsp light mayo1/2 cup light cream cheese1 tbsp capers
Directions
Recipe for one:
1. Re-heat already cooked chicken in microwave.
2. In saute pan, add butter and saute ham.
3. Add mayo, cream cheese, and capers (salt and pepper to taste if needed)
4. When chicken done, put bacon in microwave to desired crispness.
4. Add cooked chicken and mix well
5. Put mix on plate then top with olives and crumbled bacon

    One does not have to feel guilty about what she used because most is low fat, including ham. I made by the recipe and found it to be very tasty and will make again. Not everyday food, but, when your hungry it fills the bill. - 1/9/10
