Biggest Loser Mushroom Soup

Ingredients
1 tbsp olive oil1 medium yellow onion, chopped12 oz white or brown mushrooms (approx. 4 1/2 cups)1 tsp chopped fresh oregano or 1/2 tsp dried4 cups fat-free low-sodium chicken broth
Directions
In a large saucepan, heat olive oil over medium heat. Add the chopped onion and cook for about 5 minutes until it's soft. Add the mushrooms and oregano and cook. stirring regularly for 2 minutes until the mushrooms soften. Add the broth and bring to a boil. Reduce the heat to low, cover partially and simmer for about 20 minutes.
Let soup cool then transfer it to a blender or food processor and blend until smith.
Return to the saucepan and reheat before serving.
Makes 4 1 1/2 cup servings

    I love this soup (thanks for entering it!). Today I made it and added some broccoli and cauliflower that needed using up. I finished it with a half cup of non-fat greek yogurt to make it a little creamier. yummy! - 9/11/11
