Chicken Parmesan w/Tomato Sauce

Sauce ingredients:2 garlic cloves1/4 C extra virgin oil1 can 28 oz crushed tomatoes1/2 tsp dried basil1/4 tsp dried oregano1/4 tsp sugarsalt and pepperChicken Ingredients:4 (5oz) chicken breasts3 tbsp Dijon mustard1 tbsp white wine vinegar1/2 tsp salt1/2 tsp black pepper1/2 C bread crumbs1/2 C finely grated parmesan cheese3 tbsp light blue bonnett
1. Heat the garlic and oil together over medium heat until the garlic starts to sizzle.
2. Stir in tomatoes, basil, oregano,sugar, a pinchof salt and pepper. Simmer until sauce thickens a bit and flavor blend about 10-12 minutes. Tast sauce and adjust seasoning if necessary
3. Preheat to 450 degrees.
4. pound chicken for an even thickess 1/4 to 1/2 in
5. whisk together mustard, vinegar, melted butter, salt and 1/4 tsp of pepper in a large bowl ad the chicken pieces and coat well
6. In another bowl, mix bread crumbs, grated cheese and 1/4 tsp of pepper. Mix well.
7. Dredge the chicken pieces i piece at a time coating completely.
8. Cook in oven about 15 min
