Lowfat Soft Ginger Cookies

Ingredients
2 1/4 c. flour2 t. ground ginger1 t. baking soda3/4 t. ground cinnamon1/2 t. ground cloves1/4 t. salt2 T. butter, unsalted1/2 c. unsweetened applesauce1 c. sugar3 egg whites or egg substitute for 1 egg1 T. water1/4 c. blackstrap molasses2 T. sugar
Directions
Preheat oven to 350 degrees F. Mix together flour, ginger, baking soda, cinnamon, cloves, and salt. Set aside.
In a large bowl, cream together butter and 1 c. sugar and applesauce until light and fluffy. Beat in the egg whites, then stir in water and molasses. Gradually stir in the dry ingredients. Refridgerate till firm. Shape dough into walnut sized balls, flatten slightly in 2 T. sugar, then place on sprayed cookie sheet, sugar side up. Bake 10 min. Allow cookies to cool on baking sheet for 5 min. before removing to plate to cool completely. Store in airtight container.
