Egg Beater Benedict

1 Weight Watchers English Muffin (toasted)2 slices of tomato1/4 cup of Egg Beaters 3 Tbsp of Hollandaise Sauce
Single serving:
I use Knorr packaged Hollandaise and I prepare it ahead of time and keep it in the fridge. I just microwave the amount I need for breakfast (or dinner)!
While toasting your english muffin, heat and spray a non-stick pan. Fill bottom of the pan with 1/4 cup of Egg Beaters, cover and cook on medium heat for just a couple of minutes, flip and remove from heat.
Place 1 slice of tomato on each english muffin half. Fold egg in half, cut into two pieces and place on each muffin.
Top with heated Hollandaise and serve!

How do you make holindaise sauce - 4/12/09

I use Knorr or McCormicks packaged sauce mix. I can't remember which, but one of them only uses water to make the sauce. As I said in the recipe, I make the hollandaise ahead of time and keep it in the fridge ~ I only microwave what I need for that meal.
