Leftovers-one pot skillet dinner

Ingredients
1 red potato, boiled, skin on , chopped, sliced or diced 1 small/medium baby zucchini ends trimmed and washed Sliced in rings1 tbsp red onion chopped1 cup chicken breast, cooked and diced3 aspargus stems/ends trimed washed and sliced olive oil seasonings of choice- I used greek 1 tbsp melted cheese whiz(if desired)
Directions
In a non stick skillet heat oil, add onion saute for 2 minutes
cook over medium low heat
Add all the vegetables, and chicken cook until vegetables are tender or desired doneness about 10 minutes

This make one decent size serving or 2 smaller ones

plate and spoon melted cheese whiz on top if desired
