Tomato Rotini Soup

Ingredients
4 C vegetable or chicken broth4 C tomato juice1 TBSP dried basil leaves1 tsp salt (optional)1/2 tsp dried oregano leaves1/4 tsp ground black pepper2 - 3 medium carrots (1 Cup) sliced2 - 3 medium celery stalks (1 cup) chopped1 C sliced mushrooms2 cloves of garlic, finely chopped1 - 28 oz can diced tomatoes, undrained1 1/2 C uncooked rotinishredded parmesan
Directions
makes 12 1 1/2 C servings

1. combine all ingredients EXCEPT pasta and Parmesan cheese in a 4-5 qt slow cooker.
2. Cover and cook on low heat 8-9 hours (4-6 on high).
3. option 1: Stir in pasta & increase heat to high. Cover & cook 15 min. until pasta is tender.
3. option 2: when ready to serve, cook pasta separately on cook-top per package instructions and portion individually and serve with soup poured over rotini.
4. sprinkle each serving with shredded parmesan cheese and ENJOY!
