Whole Wheat Blueberry Muffins

2 very ripe Bananas1 cup blueberries2 cups whole wheat flour1 large egg, slightly beaten1/2 cup light brown sugar1 tsp baking soda1 1/4 tsp baking powderpinch of sea salt1 1/4 cups buttermilk1/3 cup olive oil (or melted butter)1 tbsp raw brown sugar
Heat the oven to 350
Line muffin tin with cases
Peel and mash bananas in a separate bowl
Mix flour, baking powder, baking soda, salt, and brown sugar in a bowl. Make a well in the center, add buttermilk, egg, olive oil, and bananas. Quickly fold together just until incorporated taking care not to over mix. Add blueberries, and give the batter one or two stirs.
Spoon batter into muffin tins. Sprinkle raw brown sugar on top.
Bake for 20-25 minutes until golden brown.
