Tortilla Chip Casserole

Ingredients
16 oz Ground Turkey1 cup chopped Onions 12 oz can Yellow Sweet Corn, 2 cup Black Beans 12 oz can Kidney Beans2 cups Spanish Rice w/Tomatoes 1.5 cup shredded Cheddar Cheese8 ounces Tortilla chips
Directions
Brown ground turkey with chopped onions. Put in bottom of sprayed casserole baking pan. Mix corn and beans in with cooked Spanish rice. Layer over browned turkey. Crush tortilla chips over the rice mixture. Spread cheese over top of casserole. Bake at 350 in preheated oven for 30 minutes or until cheese is melted. Garnish with fresh salsa and low fat sour cream.

    I did this and recalculated the stats, and using just 2 oz of tortilla chips mine has 10 fat grams per serving. I even added taco seasoning to mine and it was still kinda bland. I have to eat mine with Daisy lite sour cream. And yes, the 12 serving portion sizes are small.

    For a healthier version, try this using tortilla chips that have NO sodium. We have El Sabroso Tortilla Chips in this area, and they are great! There is enough sodium in the cheese and canned foods, and adding some garlic and onion powder will add zest to the flavor. - 3/10/09

    I will try this with a few modifications. Don't think you need rice, corn & tortilla chips so I will not use rice. Love the other ingredients so this should be a keeper. - 3/9/09

    This was really good~silly me overcooked it though!! But it was still really good and my hubby LOVED it...will definitely make this again. I put a little fat free sour cream on top and served with some salsa and it was great! - 3/27/09

    We'll definitely be making this again! With the leftovers, I added some salsa under the chip layer, and added some seasonings (like taco seasoning), and that vastly improved the flavor. I will be seasoning the meat with my own taco seasoning next time. Otherwise, it was fantastic!! - 3/23/09

    This recipe is good...but the salsa is mandatory. Without it, the dish is really dry. I didn't put sour cream on it, but I bet that would have been GREAT. I would make this again. It's a filling dish to take to work for lunch! - 12/12/08

    I make this. I do add the rice and beans: 1 can low cal black beans and I use brown rice. Cook 1 c. brown rice and add to the black beans with onions, peppers etc. Plenty of good protein here, and I like the idea of the whole wheat sun chips and FF sour cream.
