Backyard Macaroni Salad

3/4 cup Hellmans Light Mayonnaise1/4 cup chopped pimento, drained (1 2oz jar)1/4 cup chopped onion1/4 cup sweet pickle relish1 teaspoon prepared mustard1/8 teaspoon black pepper3 cups cold cooked macaroni, rinsed and drainedsugar substitute to equal 1 T sugar
In a large bowl, combine mayonnaise, pimento, onion, pickle relish. sugar substitute, mustard, and black pepper. Add macaroni. Mix well to combine. Cover and refridgerate for at least 30 min. Gently stir again just before serving.

I do a less lo-cal version of this. I add cubed cheese, cubed ham or chicken, and some peas. No need to add a lot. Even a little adds color and extra taste. Keep the cubes small. It adds protein and makes it a meal rather than a side dish. At a family event I had dishes of these to add. - 7/10/12
