Moosewood Cookbook Banana Chocolate-Chip Muffins

Ingredients
2 large eggs1/4 cup canola oil1/4 cup unsweetened applesauce3/4 cup brown sugar1/2 tsp. vanilla extract2 cups unbleached white flour1 tsp. baking powder1/2 tsp. salt1 1/2 cups mashed bananas1/4 cup chocolate chips
Directions
Preheat oven to 350. In a large bowl, mix together the eggs, oil, applesauce, brown sugar and vanilla. In a separate bowl sift together the flour, baking powder, and salt. Stir the dry ingredients into the wet ingredients until just combined. Fold in the bananas and the chocolate chips. Spoon the batter into sprayed muffin pan and bak for 20 to 25 minutes, until puffy and golden brown. A knife inserted into the center should come out clean.
Makes 12 muffins.
These muffins will keep in a sealed container for 3 to 4 days.
