3 roasted or baked chicken breasts, boneless and skinless 1/2 c minced celery1/2 c dried cranberries1T fresh tarragon, choppedjuice of 1/2 lemon2 T olive oil mayonnaisedash of pepper
Dice chicken and then toss all ingredients together, adding the mayonnaise sparingly (you may not need to use it all).
