Veggie Tomato Soup

Ingredients
2 Cups Tomato Juice Cocktail (reduced sodium if desired)2 Cups Water1 Tbsp Cornstarch1 Italian Style Chopped Tomato20-25 baby carrots chopped in half1/4 medium onion chopped2 stalks celery chopped1 cup frozen stir fry veggies1/2 cup brown minute rice
Directions
Combine 1 TBSP of cornstarch with the water then combind that and tomato juice in a pan on the stovetop over medium high heat. Bring this mixture to a bubble then stir in all other ingredients and heat through and until the rice is tender.
This recipe makes six one cup servings.
