Mashed zucchini

Ingredients
Two medium to large zucchinis chopped up1.25 Tbsp butterAdobo seasoning to taste
Directions
Cut up the zucchinis

Place in large pot of water so water covers the zucchini

Add a sprinkle of adobo

Boil until zucchini is extremely soft

Strain the zucchini in a colander

Mash the zucchini and drain remaining water

Put in bowl add the butter and adobo to taste then serve Makes 2 servings

    I do not peel them in my opinion they are much better it the peel on it gets soft but gives enough to actually bite into
