Carrot Souffle

2 lbs carrots, boiled until soft6 egss2/3 cup sugar6 Tbsp Matzo meal (3 oz crushed matzo crackers)2 tsp Vanilla extract or MolassesDash of Nutmeg2 sticks of butter or margarine, meltedTopping:6 Tbsp brown sugar4 Tbsp butter, melted1 cup finely chopped nuts of your choice
Preheat oven to 350 degrees Fahrenheit and grease 9x13 pan.
After the carrots are soft, put the carrots and eggs in a food processor and puree. Add the next 5 ingredients until smooth.
Bake for 40 minutes; edges should be slightly browned. Then add the topping and smooth over entire top, and bake for an additional 5-10 minutes.
