cream of broccoli, potato, and carrot soup

6 medium potatoes, cubed (I left the skin on)2 cans( 10 3/4 oz) cream of broccoli soup1 can Swanson Natural Goodness Chicken Broth3 carrots, choppedMilk (I used 2%) 0.5 cupwater, 1/4 to 3/4 cupGarlic, 3 clovesparsleypepperonion powderAny other herbs or spices you would like to use
Peel (if desired) and cube potatoes. In a crockpot, mix cream of broccoli soup with milk until smooth, let warm on low heat.
In the mean time warm the chicken broth in a large sauce pan, add potatoes, carrots, and water, cover and let boil about 20 minutes.
While potatoes are cooking, blend parsley and garlic together in a food processor, add the mixture to the crockpot along with any other spices that are desired (I used ground cumin, black pepper, basil, oregano, and dill weed)
When potatoes and carrots have finished cooking for 20 minutes add to the crockpot and stir. Continue to simmer on low heat for as long as you would like and enjoy as a meal with a salad or as a side dish.
Makes about 9 1 cup servings.
