Sweet Potato Casserole

Ingredients
5 large sweet potatoes, peeled, cubed & boiled1/4 cup butter1/2 cup 1% milk2/3 cup splenda for baking1 tsp vanilla extract1 large egg1/4 cup splenda brown sugar blend2 cups mini marshmallows2 tbsp melted butter
Directions
Mash potatoes and next five ingredients until smooth and creamy (think regular mashed potatoes). Spread into a 13x9" casserole dish.

Mix brown sugar, mini marshmallows, and remaining butter until mallows are pretty coated. Pour over the top of the potato mixture.

Bake at 350 for 20 minutes until potatoes bubble around the sides of the pan.

Goes really well with ham.
