Thai Chicken Salad

Ingredients
1 tbs olive oil2 boneless, skinless chicken breasts, cut into strips1 red bell pepper, cut into strips1/4 cup sweet red chili sauce1/4 cup honey4 cups lettuce handful of basiljuice of one lime
Directions
Cook chicken in large skillet over med-high heat with the olive oil until golden brown on all sides.

Add red pepper and cook until soft, 3 minutes.

Add chili sauce and honey, reduce heat and coat chicken well

To serve, spoon chicken over lettuce and sprinkle with basil and lime juice.

May add honey roasted peanuts as garnish also, but add to calorie counts...

    I loved this recipe. The flavor was wonderful. I halved the chicken and pepper but kept the sauce the same amount. I did not have fresh basil and just sprinkled some dry over the salad and used lime juice from a bottle. Really is a keeper! - 8/23/09
