Beefy Barley Soup

1 teaspoon olive oil1 pound stew beef, cut into bite-sized pieces1/4 cup chopped onions1/2 cup pearled barley (uncooked)1 cup fresh or frozen carrot 'coins'1 cup cut green beans1/2 cup sliced celery3 cups beef broth3 cups water1/8 teaspoon ground black pepper1 bay leafSalt to taste
Coat the bottom of a large sauce pan with olive oil. Brown the beef pieces and onion in the oil. Add the barley, pepper, bay leaf, broth and water. Simmer for 15 minutes. Add the carrots, green beans and celery. Simmer an additional 45 minutes, or until the barley is cooked and vegetables are tender.
