Crunchy Mexican Chicken Breast

* Chicken Breast, no skin, 5 unit (yield from 1 lb ready-to-cook * Egg, fresh, 4 medium * *Old El Paso Taco Seasoning, 6 tsp * *Crackers, Cheez-its, 3 serving * *Canola Oil, 4 tbsp * Salsa, 1 cup * *Tillamook Pepper Jack Cheese, 6 oz
Mix taco seasoning and eggs. Beat mixture until well blended.
Crush Cheese Crackers in another bowl.
Roll chicken in egg seasoning mixture and then in the crackers.
Spray pan with the oil spray lightly.
Place chicken on pan and in the oven for 45 minutes or until done. Spoon salsa over chicken and put back in the oven for 5 more minutes.
Feeds 2 Adults and 2 Children. Large portions.
