Ingredients
1 T butter1/2 small onion chopped1 T flour3/4 C 1% milk2 T parmesean cheese2 hard boiled eggs chopped3 C lightly steamed spinachsalt and pepper to taste
Directions
cook onion in melted butter until soft. Add flour and cook for 3 min. slowly add milk stirring constantly until thick sauce forms. add chopped egg and cook for 2 min. add cheese and stir until melted. pour over lightly steamed spinach.
