Veggie Fried Rice

2 C. rice (cooked and cooled)2 C. mixed frozen veggies2 tsp. EVOO3 eggs, scrambled
Heat EVOO in large frying pan. Add frozen veggies and saute for a couple min. Add rice and warm through. Scramble eggs in separate pan. Add scrambled eggs to rice mixture and stir. Makes 4 servings.
