Massaman Curry with Veg & Chickpeas

Ingredients
* 1 T coconut oil * Mushrooms, fresh, 1.5 cup, pieces or slices * Carrots, raw, 1 cup, strips or slices (remove) * Onions, raw, 1 cup, chopped (remove) * Swiss Chard, 2 cup, chopped (remove) * Chickpeas (garbanzo beans), 1.5 cup (remove) * *Coconut Milk, 1.5 cup (remove) * Water, tap, .75 cup (8 fl oz) (remove) * Brown Sugar, 3 tsp packed (remove) * Soy sauce (tamari), 1 tbsp (remove)+ 1-2 T massaman curry paste
Directions
Saute veggies (except chard) in hot oil until wilted. Add the rest of the ingredients and bring to a simmer. Simmer for 10-15 or until flavors combined.
