Ingredients
Ingredients:1/4 cup Egg Beaters (equiv. 1 egg)1/2 cup tomato sauce1/2 tsp. ground oregano2 tsp. dried parsley1 tsp. salt1/2 Tbsp. basil1/2 tsp. black pepper1 Tbsp. garlic powder1 small onion, chopped fine1 small green pepper, chopped fine1 lb. extra-lean ground beef28 small un-salted saltine squares, crushedTopping: 8 Tbsp. ketchup3 tsp. brown sugar (packed) 1/2 tsp. dry mustard
Directions
Spray a crock pot with cooking spray. In a bowl, combine the egg, tomato sauce and seasonings. Stir in the onion and green pepper.

Using your hands, add the ground beef, then the crackers. Shape into a ball, place in the crock pot, then flatten the ball into a patty, leaving about 1/4 inch of free space all around.

Stir together the topping ingredients and spread on top of the meatloaf.

Cover and cook on low for 7 hours.

    This was excellent! I used ketchup instead of tomato sauce, an egg instead of the egg beaters and panko bread crumbs instead of the crackers (all I had in my house) - it cooked really quickly in my slow cooker but to reheat it I grilled it and my husband loved it!     I used ground turkey and it was really good. It had a little too much garlic next time I would cut that in half. I will be making this again. - 7/20/09

    A great meatloaf. Easy and most important, the husband liked it alot. Next time I will cut down on some of the spices a little, and maybe add some of the ketchup topping to the meatloaf it self. At any rate, we are taking the crock pot on vacation and plan on having it at the cottage some night. - 6/6/11
