L.R. applesauce oatmeal muffins with flaxseed and oat bran

1 cup old-fashioned rolled oats1 cup oat bran2 cups 2% milk1 cup whole wheat flour1/2 cup flaxseed meal1 cup brown sugar2 tsp. baking powder1 tsp. baking soda1 tsp. salt2 tsp. cinnamon1 tsp. ginger1 tsp. nutmeg1/2 tsp. cloves1-1/2 cups unsweetened applesauce2 eggs1 cup raisins, plumped in hot water and drained
Soak the oats and oat bran in milk for 30 minutes to 1 hour. Preheat the oven to 400 degrees. Spray muffin pans with cooking spray. Combine the oat mixture with the applesauce and eggs and mix until combine.
In a separate bowl combine all the dry ingredients and mix just until combined. Stir in raisins. Do not overmix. Spoon muffin mixture into 24 muffin cups. Bake for 20-25 minutes or until done. Makes 24 muffins.

I made it this morning at 5 am and had no raisins, so I did without. I also left out the salt, as I'm low-sodium. I changed the brown sugar to 3/4 cup Splenda. They were great! I gave some to friends and was asked for the recipe. I will make these again and maybe try some cut up dates. Yum!!! - 11/16/10

Flavorful and moist. Be sure to bake entire time indicated and perhaps a bit more to ensure the bottom of muffin finishes cooking. I added blueberries to half the batter and made bread-style loafs as this made 24 muffins ++++! Will freeze for handy, on-the-go breakfasts. Thanks for sharing ! - 5/29/10
