chicken salad

Ingredients
1/2 of whole roasted chicken (1 breast, 1 leg quarter)1/2 c of mayonnaise1 lg Granny Smith apple2/3 c of pecans1 tsp soy sauce, light1 tsp curry powder1 tsp Tastefully Simple Spinach & Herb Mix - optional
Directions
Cook chicken til done. Debone and remove skin. Chop chicken, apple, pineapple, and nuts in food processor til you get to the consistency you like. (I chopped them one at a time.) Then add mayonnaise, soy sauce, curry powder, and herb mix. Stir ingredients together. Serve as sandwich or with crackers. Feel free to use lowfat ingredients to help cut calories. Rough estimate: makes 8 half cup servings.
