Savory carrot bread pudding

1 cup shredded carrots1 small white onion, minced3 tbsp butter2 tbsp honey5 slices whole grain bread1 cup shredded cheddar cheese 1 large egg1/4 cup craisins
Preheat oven to 350 degrees and spray a small 8X8 pan with pam.
Use a large skillet to melt butter over med/high heat. Add shredded carrot and minced onion. Cook and stir until onions are tender (about 2 minutes). Remove from heat and add to a large mixing bowl. Add the honey, egg (whisked), cheese and craisins. Mix thoroughly. Cube or tear the bread into small pieces and add to the bowl. Toss bread with the rest of the ingredients until completely mixed (take a little time to do this). Put mixture into prepared pan and spread evenly. Place, uncovered, into the preheated oven and bake for 35-40 minutes (until the top is browned and bubbling). Let cool for 10 or more minutes, and serve warm as a side dish. Makes 5-6 servings.
This dish goes AWESOME with a chicken main course!
