crockpot peanut chicken

Ingredients
Pound of skinless chicken breasts1 tbs of virgin Olive Oil1 cup chopped onion2 tsp chopped garlic1/2 cup fat free chicken broth1/2 cup White Wine1tbsp of ground thyme (or poultry season)3 cups freash chopped Broccoli1 large carrot, peeled and sliced3tsp of peanut sauce 4 whole wheat rolls
Directions
Brown chicken breasts in olive oil over medium-high heat. After all sides are browned remove and place them in your crockpot. Saute onions and garlic in same pan as the chicken was in until transparent and slightly browned. Reduce heat to medium and stir in broth and wine making sure to stir in the brown "crud" from the bottom of the skillet. Add spices, salt and pepper to tastesimmer until liquid is reduced in half (+/-). stir in peanut sauce. Pour this liquid into the crockpot over the top of the chicken breasts and cook on high for about 4-6 hours. Serves four, make sure you slop up some of the gravy with your whole wheat roll !!
