Tinga (Mexican Chicken Dinner)

Ingredients
4 Chicken Legs4 cup diced tomato(raw)4 cup sliced onion (raw)1 Garlic Clove4 TBSP Corn Oil2 tsp Salt or to taste
Directions
Place garlic and chicken in pot with water and boil until chicken is done. Remove chicken from broth do not disgard broth allow chicken to cool then de-skin and de-bone and shredd in pieces. Place oil in frying pan allow to heat then add chicken allow to cook for about 10 min then add onions cook until onions are almost done then place tomato in the pan and add 2 cups of broth less for a less soupy dish simmer for 15 min.
Eat with tortillas or tostadas or your chioce of other item.Also good with rice or refried beans.
