Jen's Bruchetta Chicken

2 large boneless, skinless chicken breasts - cut into bite sized pieces1 box Stovetop Cornbread Stuffing2 cans Rotel chopped tomatoes with chiles, undrained1/2 tsp dry Oregano1 tsp chopped garlic1/2 cup hot water
Mix stuffing mix, 2 cans of Rotel tomatoes with juice, garlic, and 1/2 cup of hot water in a bowl until thoroughly mixed.
Place chicken in a single layer in the bottom of a 13x9 baking dish, sprinkle with oregeno and cheese. Top with the stuffing mixture.
Bake in a 400 degree oven for 30 minutes.

I do not like Stovetop Stuffing. Yuck! Have you ever read the ingredient list? The taste is repulsive. (And I am a homemade stuffing lover). I do like Rotel cilantro and lime but too bad processed foods have so much sodium. Whole grain rice is so much healthier as mentioned by ConnieK1960. - 6/7/09
