Stove-top Mac and Cheese

Ingredients
16 oz cavatappi or pasta of choice16 oz bag frozen 3 peppers and onion mix1 Tbsp butter12 oz can non-fat evaporated milk2 large eggs, beaten1 tsp dry mustard1/2 tsp red or cayenne pepper (to taste) 1 Tbsp rosemary1/2 tsp salt4 oz colby jack cheese2 oz sharp cheddar cheese
Directions
8 1-cup servings
In large pot, boil pasta, drain in colander.
Saute pepper and onion mix until the extra water cooks out. Add pasta back to pot. Add butter, spices, evaporated milk and eggs. Cook over medium heat. Add cheese, stir constantly as it melts. Continue to cook, stirring constantly, until the sauce thickens. This will take a few minutes, but is worth the wait.
