Blender Oat Pancakes (Soaked)

Ingredients
1 1/2 Tbsp. vinegar1 1/3 cup milk2 Tbsp. oil1 tsp. vanilla1 1/2 cup uncooked oats-------1 egg-------2 tsp. baking powder1/2 tsp. baking soda1 tsp. salt
Directions
Add first group of ingredients to the blender and blend for 3 minutes on high. Cover blender and let sit for 12-24 hours.

Just before cooking, add 1 egg and blend for 1 minute. Add additional liquid at this time, if needed to blend properly.

Then add baking powder, baking soda, and salt and mix briefly until incorporated.

Pour on preheated griddle or frying pan. Makes about 20 pancakes with 5" diameter.
