Turkey Enchilada Burgers

Ingredients
1 lb lean ground turkey1 can black beans1 can corn2 cups cheddar cheese1 can enchilada sauce1 pkg taco seasoning
Directions
Brown turkey with taco seasoning. Drain and rinse beans and corn. Add to turkey. Add enchilada sauce and cheese. Stir well. Put 1/3 cup on top of 1/2 of a hamburger bun and toast or broil until cheese is melted.

    Awesome! Loved it! Didn't mix the cheese in, just sprinkled on top before I put under the broiler. Otherwise followed recipe. I used 2 c. of black beans I soaked and cooked rather than the canned beans to cut down on sodium. Everyone loved! Will defintely make again! - 6/3/11

    I did a little something different, inspired by this recipe, I grilled a turkey burger and topped it with a mix of the black beans, corn & enchilada sauce with taco seasoning mixed in. Then I topped that with 2 tbsp. grated cheddar cheese. Yummy! add a side of whole grain tortilla chips. Great meal! - 5/18/11

    Made this last night. Doubled the turkey, added extra chili pepper to taste and left cheese out. Got 16 1/2 c. servings. Served 1/2 c. on bun half topped with 1/4 c. fat free cheese for a total of only 216 calories. Was a HUGE HUGE hit! Frozen mix reheats well. Thanks for sharing this recipe! - 6/11/09
