Sweet Potato with Yogurt Lime Sauce

Ingredients
4 large Sweet Potato's2 tsp Cumin1 tsp Ground Ginger1 tsp Paprika1/2 Tsp SaltPepperOlive OilYogurt Lime Dressing1 Cup Plain Fat free yogurt3 TBSP Cilantro2 TBSP Chopped Walnuts1 TBSP Lime Juice1/2 Tsp Ground CuminSalt
Directions
Peel Sweet Potato and cut into wedges approximately 4 inches long

Combine:
2 tsp Cumin
1 tsp Ginger
1 tsp Paprika
1/2 Tsp Salt and a Dash of Black Pepper
Mix thoroughly

rub 2 TBSP of Olive oil onto the potato wedges and sprinkle the above mixture onto the wedges mixing thoroughly

Bake at 400 Degrees for 15-20 minutes and then flip over and bake an additional 15-20 minutes until fork tender.

While the potato's are baking make the Yogurt Lime Dressing

Combine
1 Cup Plain Low Fat Yogurt
3 TBSP CIlantro
2 TBSP Chopped Walnuts
1 TBSP Lime Juice
1/2 tsp Cumin
Salt

Plate the Sweet Potato's and drizzle with the Yogurt Lime Dressing. Garnish with Fresh Cilantro
