Lentil "Sausage" Soup

Ingredients
1 Tbsp Olive Oil1/2 c. chopped onion2 cloves garlic, chopped3/4 c. lentil, rinsed2 cup low-sodium vegetable broth2 c. meatless sausage crumbles1 tsp rosemary1 tsp thyme1 tsp salt
Directions
1. Heat oil in large saucepan. Add onion and garlic and saute until soft.
2. Add broth and lentils and bring to a boil. Cover and reduce heat. Simmer for about 20 minutes, or until lentils are soft.
3. Use a hand blender to puree the lentil mixture until smooth. Add sausage and seasonings. Stir to blend.
4. Cook until warm and serve.
