4 sm potatoes, peeled and cut into 1/2-inch strips3/4 tsp sea salt1/2 tsp sugar4 tsp Olive Oil1 tsp paprika
1. Preheat oven to 425 degrees; spray a non-stick baking sheet with nonstick cooking spray.
2. In a large bowl, toss the potato, 1/4 tsp of salt and the sugar in with cold water to cover. Soak 15 minutes, drain and blot dry.
3. In another large bowl, toss the potato with oil and paprika. Place in a single layer on the baking sheet. Bake, turning the potato over as it browns, until cooked through and crisp, about 30 to 40 minutes. Sprinkle w/ remaining salt.
