Tuna and Yam casserole

1 can (6 oz.) tuna, drained1 large yam, sliced into 1/4 inch rounds1/2 medium red onion, sliced into rings1/2 medium red pepper, cut into chunks1 tbsp fresh basil or 1 tsp driedfresh ground black pepper1 tbsp olive oil1 tbsp balsamic vinegar1 tbsp lemon juice1 tbsp butter1 tbsp flour1/2 cup grated Parmesan cheese
Preheat oven to 350 f.
Place yams, red onion, red pepper, basil and fresh ground pepper in a 9 x 13 casserole dish. Blend oil, balsamic vinegar and lemon juice and combine gently with the vegetables. Cover and bake for 20 to 30 minutes.
In saucepan over medium heat, melt butter. Add flour and then add milk stirring constantly. When mixture has started to thicken, remove from heat and add grated cheese. Stir until cheese has melted.
Remove vegetables from oven and place drained tuna in pieces on top. Pour cheese sauce over all.
Bake covered for 15 min., then uncovered for an additional 5 minutes.
